Lovely Lamb


In my food column this month for The Gloss magazine I write about Spring lamb and a time for learning.

New born lambs are appearing in the fields around our house. This happens just as my friends and neighbours bear the weary eyes of long nights in sheds with bawling ewes, or bottle feeding the unwanted or third in a triplet set in the kitchen.

The valley I live in is mountainy marginal land and has very few cattle anymore. Most of the sheep farms have consolidated into a remaining ten to twenty farmers with their own home farm and sheds, who rent extra land from families that have left farming. Close to us the Hogans, McKees and Keegan's of @waterfallfarm shop are in the thick of the lambing season. In a fickle marketplace it's a business with price rises and crashes like everything else. Sheep are also notoriously tricky to rear and I've witnessed myself the old adage - the first indication of illness in a sheep is mortality. Yet the farmers still stay up all night, both men and women, to lamb ewes, to get the newborn started on feeding and nurse the ones not thriving.

Lambing season here is something both myself and my children delight in. The squeals of delight in response to newly born lambs bucking and skipping on their first day out on grass say it all. It's a pity that as a foodstuff in Ireland we are eating less lamb and it's now purchased by mainly older consumers. I love lamb. I buy half a lamb from the farm across the lane every year and for me it tastes like home.

One of my Spring pleasures - holding a new born lamb is unfortunately contraindicated to eating one. Not only are they too cute with their little velvet muzzles, early lamb can have a jelly-like texture and is much better killed at about five months old. While the garden eases into Spring I´m still cooking plenty of dark cabbage and have successfully converted all cabbage sceptics with my fabulous Gnocci with Savoy cabbage and Wicklow Blue or fried off with chorizo and garlic for an easy soup with vegetable stock and cream.

Around Dublin I´ve fallen in love with The Green Bench cafe on Montague Street (as if those pesky Dublin 8-ers aren´t served with enough great spots for a quick lunch). The serve lovingly-made take out for at your desk or if you´re like me - on the run from one venue to the next.  Super moreish is their wrap of citrus marinated feta with avocado, olive tapenade and hummus.

Not far away on Stephen´s Street, P. macs is a more comfy version of the cocktail zinc bars populating the South William street area. There´s lampshades straight from your grandmothers, patchwork armchairs and if you don´t feel like wearing towering heels it’s cosy for a quiet drink in the snug and some decent pizza. Another dress-down hide out for early evening is open downstairs on Dawson street. FAATBAAT serves a multitrip of cuisines – everything from Japanese ramen dishes to Malaysian “Drunken Prawns”. Their Go Go Bar is what this place is all about though with great tunes and decent cocktails.
Always a hot social ticket, the best food producers in the country compete on the 12th March for a gong from my own parish – the Irish Food Writers Guild. The awards will be hosted by Derry and Sally-Ann Clarke in the wonderful L´Ecrivain. We have some stunning food and drink entries, all Irish artisan-produced but I am sworn to secrecy. No better time than Spring to sharpen cookery skills. To mark her new book The Extra Virgin Cookbook, Susan Jane White is hosting an evening of cooking and tasting at Fallon and Byrne on the 12th. Countrywide, it´s great to see many people I admire in food offering their expertise. JP McMahon, Michelin-starred chef and owner of Aniar in Galway has day workshops this month in “Nose to Tail Eating” and “The Whole Hen”. Down in Thomastown the inspiring Mag Kirwan is holding classes in smoking at her Goatsbridge Trout Farm.

Close to the beautiful beach at Termonfeckin in County Louth, the Tasty Tart Tara Walker has classes in cooking fresh fish landed at nearby Clogherhead and Foods of the Middle East, timely with the huge popularity of Ottolenghi. If you have a few bob ditch Ottolenghi and go to Beirut, one of my favorite cities for food - figs, hummus fatteh, baba ghanoui… Or closer to home check out Silvena Rowe´s cooking in at Quince in London´s Mayfair Hotel and her gorgeous book Purple Citrus and Sweet Perfume: Cuisine of the Eastern Mediterranean

Basketcase on trial - what I really feed my family


This piece appeared in The Irish Independent last week. The editor and I felt it was important in the wake of the horsemeat crisis to talk about the ins and outs of buying meat products and a quick guide from the horses mouth so to speak (bahahaha) on what's healthy and risky in terms of processed food is what consumers want right now. 

I feel that telling people only to buy organic or local food is not where its at, or something that most peoples income allows for. My grocery shop for my family of four is a mixture of the two - buying both local and supermarket products, and cooking really simple dishes that don't break the bank. All of us have been rattled by the horsemeat story and are shopping more carefully. A Which? survey in the UK shows substantial loss of confidence in the safety of processed meats. While 9 out of 10 customers felt supermarket food was very safe to eat before the crisis, the number has now dropped to 7 out of 10.Have a look and let me know if your food strategy has changed in the wake of the horsemeat crisis.

Food Writer Suzanne Campbell - "What I really feed my family"

“Are chicken goujons safe to give the kids?” These are the sort of questions mothers ask me, especially since the horsemeat crisis began in January. As a food writer the story didn’t take me by surprise. I live in the countryside and keep horses; one which was destined for a meat plant before I gave it a home.

Over the past weeks I’ve done countless interviews for Irish and European media on the issue and in a bizarre twist, conducted a live radio piece on horse burgers while exercising my own horse. For me, horsemeat was the perfect storm; the under-regulated horse trade exploding into a Pandora’s Box of horrors for consumers. In 2009 I had spelled out these fears in the book “Basketcase: what’s happening to Irish food?” co-authored with my husband – journalist Philip Boucher-Hayes. Then as now, our warnings about the real cost of cheap food fell on deaf ears.

I’m a journalist and the mother of two young children so I also put a family meal on the table every day. Living in the Wicklow hills may be the foodie dream and I go to a lot of swanky food events but our home menu is far from Masterchef. I don’t spend a lot of money on food, I just keep things simple. When people ask me is something safe to eat, I’m honest. There are some foods I just wouldn’t eat and some surprises that I would.

You will never see a ready meal in my kitchen. One spaghetti bolognese I examined recently contains just 16% meat. Food “extenders” and “fillers” often make up the rest, adding volume and taste to sausages, burgers, ready meals and any amount of things in our trolleys. The reason? They reduce food manufacturing costs by 10-30%.

I understand why many consumers buy ready meals. As a working mum I often finish my day with cooking the last thing on my mind. I get round this by always having meals in the freezer. When I cook a chilli beef, ratatouille, curry, Irish stew etc I make twice the amount and freeze a complete meal. This is the key to avoiding take-away on the way home from work or dropping into the supermarket in a flap and coming out with a huge bill and still nothing for dinner.

The aforementioned chicken goujons I simply don’t buy or eat. I peeled open a chicken goujon last week that looked like MRM (Mechanically Recovered Meat). MRM has a texture like sponge. It is not allowed at present in European food manufacturing but businesses get around the law by using the “Bader process” to make virtually the same thing – meat recovered from sinews and scraps from carcasses.
The safety issue for me is what’s used to congeal these bits of meat back into a palatable foodstuff. I don’t eat anything “re-constituted” that doesn’t have muscle texture, including turkeys or chickens at carvery counters that look like footballs.
After our RTE documentary “What’s Ireland Eating” aired many people approached myself and Philip with fears about ham. We showed a process where ham joints were boosted to a huge size by hundreds of needles pushing water and nitrates into the flesh. Processed meats, including hams and salamis have been linked to colonic cancer. Imported rashers and ham has higher nitrite levels (up to 20%) than are allowed in Ireland so I always buy ham with Bord Bia quality assured label.

Look for ham (even packed slices of ham) cut from the bone where you can see muscle grain. Likewise, jelly-textured cubed chicken found in sandwich bars, and deli counters. Even if it’s covered in a heavy “Cajun” or “Tikka” dressing; most of this chicken comes already processed from Thailand or Brazil and rarely made from fresh Irish chicken.

Ireland imports 2.5 million chicken breasts a week. Many of these have been found by the FSAI to be gas-flushed with CO2 to preserve them, on sale with incorrect use-by dates and could be up to ten days old from as far away as the Ukraine. Butchers are my first choice for buying beef but I don’t buy chicken in some butchers as many imported chicken fillets are sold loose on their counters. At the very least this chicken is stale. I only buy chicken fillets if they are Bord Bia certified (in supermarkets), free-range or if I’m flush, organic.

In our house meat is not a central part in every meal. I make a soup (curried carrot and parsnip, leek and potato) about twice a week, and yes, I add cream. This could be a dinner in my house. As is also scrambled eggs with tomato and basil, simple spaghetti with Irish mushrooms and pesto, cous cous or quinoa salad with mixed leaves, chopped peppers, cumin, olives and salami.
We’ve one child who is a great eater, the other one is more tricky. I adopt the French approach with children; mealtime choice is - menu A or menu A. Research show some foods like lettuce have to be offered up to 21 times before they are eaten; I put it in lunchtime sandwiches, it gets picked out. Then one day it isn’t picked out and eaten from then on. So don’t give up.
For my food shop I buy meat and vegetables from shops in my local village, spending about thirty euro a week in each. I buy store cupboard foods in one big shop about every three weeks in either Superquinn or Aldi. I know many Irish farmers who produce own brand product for Aldi. I also buy a lot of their imported foods like kidney beans, tinned tomatoes, chick peas, chillies, herbs and spices. Choose what has the least added ingredients and cooks well.
Remember, the more players involved in a single food product, the more likely it is to go wrong. Yearly I buy half a lamb from my neighbour butchered into joints ready to cook or freeze. At the weekend I buy sourdough bread, Kilbeggan porridge oats, Ed Hick’s rashers and eggs from the local farm shop.

My family food spend is under 150 euro a week, not counting wine or craft beer which I splurge on now and again. If I wasn’t partial to French wines and Irish cheese I would probably be the most healthy person on the planet.
So what can we do to eat safely and not pay out a fortune? Keep your food chain short and keep things simple. It takes work but shouldn’t break the bank. I dislike patronising advice to consumers to only buy organic or local. Find a place on the food and cooking scale you are comfortable with. Ditch Masterchef, take the pressure off yourself and cook with freshness to get taste.

Chicken in a restaurant or sandwich bar – unless stated on the menu it is imported
Breaded fish including salmon, I stay away from farmed salmon and buy wild smoked salmon as an occasional treat
Brightly coloured snacks or crisps. McDonnell’s and Keoghs are pretty additive free.

My unexpected favourites
Aldi’s Duneen natural yoghurt; I use it with everything; blitz with fruit for summer smoothies
Burgers – cook your own from mince or buy Aldi’s Aberdeen Angus 100% Irish beef; red meat is the best way to get iron into your system
Beans (without sugar) – unglamorous but a nutritious two minute meal heated on crusty bread
Smoked mackerel or herring costs about three euro a pack. Smashed up with crème fraiche and rocket makes a gorgeous topping on toast. Goatsbridge trout is so good eat it on its own.
Sodastream – invest in one. I drink two litres of sparkling water a day. Saved me a huge amount of cash and recycling of water bottles.

New Irish whiskeys, cheese and gorgeous sourdough breads: my January food picks from The Gloss magazine

After a couple of busy months attending and presenting food awards it’s good to be at home and looking at what's new in Irish food and drink for the year ahead. For starters, cold Januarys are the perfect excuse to take Rihanna and Jay Z’s lead and drink Irish whiskey. 

Jack Teeling, who sold Cooley for €73m last year has hit the stills again with a new blend of Scotch and Irish single malt. Teelings Hybrid certainly causes a hurricane in the back of your throat, but it’s also a really  warm and complex whiskey. With a hard cheese like David Tiernan’s Glebe Brehan made from his herd of Montbeliarde cows in County Louth, it's a combination that makes for a grown up, contemporary treat.

The following day you may need my new find, Dublin Kombucha – a Japanese cleansing tea full of antioxidants and good bacteria brewed by Laura Murphy in Stoneybatter. Suspiciously healthy sounding but gorgeous – a cross between sparkling apple juice and miso soup.  DBKB deliver, with a four-pack costing €10. The Joe Macken empire stock it, and Cake Café just off Camden street.

Bakes and breads are perfect warming January foods.  New York is having a French baking moment as renouned Frenchman Eric Kayser wows the well heeled with his sour dough breads. Sour doughs require fermentation and you’ll only find them made by craft bakers such as Dublin-based Thibault Peigne www.tartine.ie whose breads (which take 48 hours to make) can be found in Listons, Mortons in Ranelagh. Try his French rustic sour dough grilled with some goats cheese, torn basil and prepare an addiction plan.

French baking is also the name of the game at Armelle’s Kitchen in Kilcullen, Kildare. Armelle turns out the mouthwatering cakes while her partner Kenny makes classic French macarons. Their rum frangipane lasted all of three minutes in our house.

For low key French I love La Cocotte café upstairs in L’academie Francais on Kildare Street. Quiet, with a gorgeous view over Trinity’s cricket grounds, Arnaud Bucher presides over a choice of fabulous pastries, pain garnis (with proper baguette) and plat du jour. I order the charcuteries francaises and pretend to read my battered Proust.

For really good baking outside Dublin check out The Gallery Café in Gort where fringed lampshades take you straight back to Abigail's Party, Brown Hound Bakery in Drogheda for the prettiest of treats under delicate glass cloches and Laura Kilkenny’s outstanding The Wooden Spoon in Killaloe which can’t stop collecting awards.

January is also plein with chefs going their own pop-ups. Andrew Rudd tells me he’s busy at his new venture Medley – cookery school and dining in an airy Fade Street loft. Ian Marconi, (ex Moro and St John’s of London) is moonlighting from the moorish meatballs of The Paella Guys to do some cool private dining in the parlour of his Portobello house. www.parlourgames.ie

In my own parlour I’m planning a wintery feast of roast lamb as outside the kitchen window the rams graze in their raddles – a paint pack on their chest which marks the rump of the ewes they get up on. How clever would it be if prolific Irish males wore a similar apparatus – no more awkward moments in Guilbauds.

Can foodies and commercial farming co-exist?

Savour Kilkenny organisers you know who you are. Again; a great festival. Again I return home so stuffed with gorgeous local food I roll out of my car on arrival, replete with foodie gifts for just about everyone except the dog.

What stood out for me about this year's festival was the inclusion of John Bryan from the Irish Farmers Association on the Foodcamp panel where I was also speaking. As someone with a foot in both camps, I feel the food world and the farming world frequently revolve around each other like two suspicious planets. Rarely do they have an opportunity to meet, engage in discussion or put to bed misunderstandings that exist between the two sectors. The GM issue has polarised this with many foodies and food groups now pretty angry with Teagasc and the IFA. Many also oppose the general idea of commercial farming which they feel is overfond of GM animal feed and supports a liberalisation of GM technologies in Ireland.

In fact the position of both sides is far more complex than this, but you wouldn't believe this unless you talk to the people involved. And that's the problem, many foodies never meet anyone who farms and most farmers have scant time to talk about the eating quality of a white truffle from Piedmont or what Rieslings they particularly enjoy.

Speaking on the Kilkenny Foodcamp panel last Thursday I suggested both worlds have a lot to learn, and more importantly to gain from each other. The IFA are superb lobbyists and have access to Simon Coveney our Minister for Agriculture and Brussels in a way that leaves the artisan and small food sector far behind. Yet both are singing from the same hymn sheet. Irish cheeses and artisan products are the shop window that sell our clean green image to the likes of Sainsburys and Danone. Big food can exist with small food, but unfortunately I often find myself the only person in the room saying this.
So kudos to Mag Kirwan and the organisers of the festival for including the IFA. As Mag said herself during the panel discussion "I hate the word artisan. And you won't make money making produce at your kitchen table". Her business Goatsbridge Trout had to grow to be successful. Others can remain small and still make money. What's important is that there remains a no size fits all mentality to the food sector in Ireland. Those that are very big or very small are not necessarily in opposition to each other. Yes we have to be careful that Harvest 2020 means sustainable production and that Ireland steers away from a factory farm model. But the only way in ensuring that is that the farming and the food sector shares more common ground and starts talking to each other like the example of what happened at Kilkenny. So, what about it lads?

Want to ban cheese ads being seen by Irish kids? You've two days to do so... or not

Cheese is getting cheesed off. And I'm not surprised. If you're a supporter of Irish cheese or hate the fact that cheese could soon be banned in advertisements shown during children's television, you have just a few more days to submit your views to the Broadcasting Authority of Ireland on the proposed ban.

What the BAI want to do is ban ads for foods which can contribute to obesity in children. There's no doubt we have an obesity crisis in this country but under the BAI's nutritional profiling model, cheese is classed in the same grouping as fast food burgers and chips, soft drinks and chocolate bars. This is because cheese frequently has high levels of saturated fats, and there's no doubt that it does - with the average commercial cheddar made up of about 40% fat, or more.

But as we know, cheese has a very clean slate of ingredients compared to processed foods and snacks which are at the heart of our obesity problems. Many in Ireland's food sector view the ban as something that could be both detrimental to our dairy industry and also to children's diets. With research showing that many Irish children and teenagers are deficient in calcium it seems a contradictory approach to class cheese as a "bad" element of a varied diet. Particularly when you compare of dairy produce to the empty calories that children and young people are getting from soft drinks and the super high fat foods that they eat outside the home.

The proposals are also potentially harmful to the international push we are giving Irish dairy products in huge grocery marketplaces like China. This is the view of Irish artisan cheese producers, the Irish Farmers Association and summed up pretty much here in the The National Dairy Council's view on the issue -

“Restricting the advertising of cheese in Ireland will directly undermine the development of the Irish cheese industry, an industry where a huge element growth is predicated in terms of exporting increased production of Irish cheese to international consumers. The positioning of cheese in this proposed regulation as, effectively, 'junk food' could create reputational issues which may take years to reverse.”

Yes, you can self medicate with food. Things to throw in your trolley...


What's a legume? Well essentially its a bean - a kidney bean, chick pea, butter bean, runner bean... you name it. Legumes take central stage in a piece of mine in the Irish Times today. It's the start of a series on how what you put in your trolley can improve common illnesses we all suffer from.

Instead of telling people what Not to eat, my approach here is to give them solutions. So if you've high blood pressure, eating legumes helps rid the body of excess water, which if retained can raise blood pressure. Beans such as lentils and white beans also contain high levels of potassium which helps rid the body of excess salt.

There's all sorts of things you can include in your diet to address many different health issues. The series will also cover mental health, fatigue, fertility and lots of other annoying conditions that appear in our lives on an ongoing basis. What I'm saying is - before getting a prescription as long as your arm for simple common conditions, (like migraine, or continual tiredness) try looking at your diet. Though perpetual tiredness... with a toddler and a young baby on the go I'll put my hand up to this. Though 70% cocoa chocolate helps, a lot. x

Like beer, pubs, cheese, eating, everything? Check out this little video and a celebration of our wonderful Irish farmhouse cheeses and craft beers

Many years ago as a young producer on Ear to the Ground I set up a story on Ardrahan cheese in Cork and came home with rounds of the most gorgeous soft, richly-flavoured Irish farmhouse cheese. It was all fairly new to me at the time, and in fact in I remember sitting round with a bunch of us in the production office, digging in and generally looking wide-eyed at each other saying - wow this is Really Good... How come we didn't know about this before?
That was over ten years ago and particularly in that period, Irish farmhouse cheeses have grown from a small number of producers to over fifty businesses. These range from what I call the big players - Cashel Blue, Gubbeen etc.. who have their product on cheese boards in top restaurants and who've developed export markets to the smaller, newer entries such as Mary Kelly's Moonshine soft cheeses made in Mullingar.

The last ten years or so have also seen the growth of craft beers in Ireland. Long in the stranglehold of the big international breweries, most Irish pubs or restaurants offered little choice in anything local or alternative to drink. Now we've no excuses - with gorgeous beers from Dungarvan Brewing Company, O'Haras, and Eight Degrees Brewing and fourteen other craft brewers getting into off licenses and pubs, we finally have alternatives that are great tasting products. I adore a decent beer and any chance I get, I pick up some of the new Irish offerings. Yes they are more expensive but they taste fantastic, with real bite and flavour.

Last weekend in Ireland saw a countrywide initiative to bring craft beers and farmhouse cheeses closer to consumers who may not be aware of, or buy this kind of food and drink. Bord Bia, the national food organisation here initiated the Farmhouse Cheese and Craft Beer Weekend with over 30 activities that took place in farms, breweries, restaurants, gastropubs, off-licences and markets across the country involving tastings, pairings and demonstrations.

All these beers and cheeses have individual stories behind them and every time I eat an Irish cheese such as Glebe Brethan (a gorgeous Gruyere type cheese) I think of David Tiernan out milking his cows that morning in all kinds of weather and muck and madness. Because that's the reality of farming; it's tough, often disheartening but also rewarding for people like David when you're making a product as good as his at the end of the day. The picture left is of the cheese room at Ardrahan; a small Irish business but one creating crucial employment in rural areas [I particularly love the St. Bridgets cross on the wall; a big feature of my childhood as my parents came from the wetlands around Lough Erne]
And this is what it's all about; small family businesses and the personalities, places and stories behind them. According to John McKenna, eminent food writer here and editor of Bridgestone Guides - "We are dealing with the most bespoke artisan foods in the world here. Craft beers have the ability to take you into the brewer's highest aspiration; that potent wish to make a drink that evokes their work. They are being treated as the wines of Ireland. The farmhouse cheeses convey the good things of Ireland; pure food; fine milk, and content animals, about sharing and hospitality, and the creativity of a determined individual on a small Irish farm, stamping every cheese with the signature of their personality. It is marvellous to see them being enjoyed and appreciated together"

Fat tax adds 6% to price of cream; supermarket charges 17% more, just for the hell of it. The Denmark fat tax experience

Yes sometimes I moan about supermarkets, but I never thought they could have an active role in mucking up public health policy.


I recently did a report on RTE radio about Denmark's Fat Tax. Instead of the expected trend in consumers purchasing high calorie foods, what I found was that retailers there are using the tax to fatten their bottom line. A price survey of eight supermarkets carried out by weekly Danish newspaper Søndagsavisen with co-operation from the Tax Ministry, revealed that prices on many fatty foods were significantly higher than warranted by the tax’s introduction.

For example, while Skat – the Danish Tax and Customs Administration had calculated that the price of sour cream would increase by 6.6 percent due to the fat tax, the spot check revealed that at supermarket Aldi the price of sour cream was raised by a whopping 17.3 percent.
Aldi was the worst offender in the study, with the supermarket raising prices on 9 of the 10 inspected products by more than what could be accounted for by the new tax. Lidl was also an offender - they had increased the price of sour cream by 15.1 percent more than warranted by the tax. Both of these firms operate in Ireland and in fact are growing their share of the grocery market here.


The Danish Consumer Council’s reaction was “Supermarkets can determine their own prices, so it is not prohibited, but it doesn’t look good.” Yes, it sure doesn't look good. Politicians there have now said that there needs to be a debate on “whether there are ways to protect the consumer.”


In all my analysis of fat taxes and obesity measures around the world I was probably naive to overlook the huge issue of how these taxes are delivered - via the supermarkets. As there is yet no regulation on supermarkets in Ireland, going down a sugar tax or fat tax route could put us in exactly the same postition as the Danes - being fleeced. There are also supermarkets in Denmark who are not charging the new tax and trying to gain competitive advantage. So basically, the public health measures expected from the tax are at the whim of the companies who deliver them.


Later this winter we should have legislation here on a proposed new supermarket ombudsman and the possibility of at last protecting both consumers and food producers. After giving a witness statement at an Oireachtas Committee on this back in 2009 it's getting critical that something finally be done. Successive governments here have shirked their responsibilities on the issue. The Danish example just goes to prove that if you have no legal framework to work with the supermarkets on pricing then you may as well be throwing public health measures down the pan.

Waterford's soft white bread known as the "blaa" is applying for EU protection, but why aren't more Irish foods doing the same thing?

EU protection is being sought for Waterford’s blaa bread roll, in line with that for champagne. Shouldn’t other Irish foods also apply?

WATERFORD’S distinctive floury bread roll, the blaa, could soon rank with such delicacies as Parma ham and feta cheese if it is granted protected status for its regional characteristics. If the blaa achieves the EU’s standard of protected geographical indication (PGI) it stands to gain from being a unique product, like champagne, which is protected from imitation.
Yet while many Irish foodstuffs are produced using local ingredients or methods, few of our artisan foods have gained or even been submitted for PGI status. Research indicates that the PGI designation brings with it considerable economic and environmental benefits. An EU report found that French cheeses with PGI sold, on average, for three times the price of other cheeses. It also found lower unemployment in areas that produced these foods.
Consumers appear to be switched on to the value of PGI foods, too. According to the research they perceive food with PGI as more trustworthy.
So why aren’t more Irish food producers applying for this designation? Britain has about 50 foods, including the Cornish pasty and Cumberland sausage, protected by PGIs.
One of the difficulties is that the application process for PGI takes at least 18 months. “The words ‘time’ and ‘detail’ come to mind when you apply for this scheme,” says Dermot Walsh, one of four bakers who came together to apply for protected status for the blaa. “We had help from Bord Bia, the Taste Council and the enterprise board, but it’s a long journey. It took the Cornish pasty nine years to get protected as a regional food.”
Also, getting a food’s geographical origins and properties protected is more feasible for groups of food producers than it is for stand-alone brands.
Sergio Furno of Cashel Blue says, “As we are the only people producing Cashel Blue cheese, if we applied for and won a PGI, then anyone in the region around Cashel could start making a ‘Cashel Blue’. So, by not applying, we remain in control of the brand.”

HOW IT WORKS
Protected geographical status (PGS) is a legal framework within the EU that allows countries to protect the names of regional foods. Protected designation of origin (PDO), protected geographical indication (PGI) and traditional speciality guaranteed are designations within this framework.
Four Irish products have already gained PGI status: Timoleague brown pudding, Clare Island salmon, Imokilly Regato cheese and Connemara hill lamb.
A PGI product must come from one region, have a specific characteristic of that region and be processed or prepared there. To gain PDO status, a product must be wholly produced in a specific region.
Because the flour for the blaa comes from overseas, Waterford can apply for PGI status only.

Here's me with some sandwiches, best avoid them, I promise

Ignoring the salt cellar at the dinner table might make some of us feel that we're eating more healthily. But avoiding high blood pressure, heart disease and the consequences of eating salt is more difficult than we think as many of us eat high quantities of it without realising.
New research shows that over a teaspoon and a half of salt is eaten every day by most Irish people, causing health risks that we're completely unaware of.

The recommended intake of salt per day is no more than six grams. But the Food Safety Authority of Ireland has found that Irish adults are eating on average 10 grams of salt a day -- putting us at risk of death from heart disease and stroke.

Frequently we don't even know the salt content of many foods that we eat. Meat, fish and dairy products provide about a third of our daily salt intake, with a further 26% provided by bread and rolls.

Other foods that regularly contain high levels of salt are sauces, biscuits, confectionery and breakfast cereals.


The frustrating thing for consumers is that while we may be aware of the dangers of salt, food manufacturers don't always share the same view -- pizzas, ready-meals and the humble sandwich are some of the biggest culprits for high salt content. Sandwiches and ready-meals can contain between 25% and 50% of your daily recommended intake for salt. And using petrol stations for more than a fuel top-up may find you eating more than you bargained for.

A Topaz mixed sandwich containing cheese, chicken and stuffing has three grams of salt -- half your daily allowance. And if you go for an M&S quick dinner option, their Macaroni Cheese ready-meal has 2.4 grams of salt, more than 40% of your daily allowance. But the top score goes to M&S's 12-inch cheese and pepperoni pizza, which contains nearly six grams of salt, your total salt intake for the day.

Tesco doesn't fare much better, with their Finest range Italian salami and mozzarella sandwich containing 2.6 grams of salt, and many of their ready-meals containing half your daily allowance.
As cardiovascular disease is the leading cause of death in Ireland, the Irish Heart Foundation point out that reducing our intake of salt to six grams a day would save more lives from what is a widespread disease.


Pat Crowley, a GP in Co Kilkenny, explains how salt can work in the body with dangerous consequences. "When you have salt in your bloodstream, your cells have to increase the volume of blood to balance it, and that's the reason blood pressure rises."
Eating too much salt confuses the normal functioning of cells and affects how our systems are balanced.


"Sodium, chloride and potassium constantly work together so that the function of your cells are normal. If these levels are out of kilter or too high, you can develop an abnormality pretty quickly, leading to heart arrhythmia or more seriously, a heart attack."
Many of Dr Crowley's patients find tracking the salt in their diet quite difficult .

"Food manufacturers have always put salt in food as a preservative, so even if you're not sprinkling it on your food it can still be there in large amounts". Salt labelling doesn't help as it's sometimes labelled 'sodium content'. Sodium amounts are smaller than 'salt' as 1.6grams of sodium equal 4 grams of salt. So thinking a chilled Thai green curry is healthy because it has one gram of sodium on the packet isn't the case -- it actually has 2.5 grams of salt.

Indeed "healthy" food options such as wraps and salads can sometimes contain surprising amounts of salt. M&S's Crayfish and Mayo salad contains two grams of salt and their Hoisin Duck Wrap has nearly the same amount. Salad dressings are often hidden sources of salt, as are mayonnaises, sauces and other additions to "healthy" lunchtime options.


Food manufacturers like adding salt because it ties into what we expect food to taste like. But this can lead to health issues not just confined to cardiac-related problems.


"High sodium intake is also linked to osteoporosis and other conditions, so there's a range of dangers people are unaware of," says Dr Daniel McCartney from the Irish Nutrition and Dietectics Institute and lecturer in human nutrition at DIT. Food labelling can be improved -- not all sandwiches or prepared foods show either sodium or salt content and this is more difficult if you buy your sandwich from a deli counter. "At the moment it's not mandatory to label salt content in food," says McCartney. "Consumers should have the benefit of clear labelling because then they can at least make an informed choice."


One thing very clear from our survey is that food sold in garages not only had some of the highest salt content, but it's often purchased by men who are spending the day in a car -- making them a key risk group for cardiac problems. "Research shows that the more educated and affluent people are, the more knowledgeable they are about healthy eating.


"So unfortunately there are sectors of society unaware of the dangers of salt in their diet and the damage it's causing," says Dr McCartney. Taxing convenience foods, like they do in Denmark, may be one way to drive people away from high-salt foods but it could be difficult to implement.


Dr McCartney has an alternative approach. "Subsidising healthy foods might be a better way to deal with this and would be certainly easier to implement. People could then displace foods that they might have planned to eat with something healthier and cheaper."
