Browning in apples ha...This post is a bit off base. Browning in apples has nothing at all to do with them going off. It is a natural, and rapid reaction of enzymes in the presence of oxygen, and occurs on a timeline completely unrelated to bacterial growth, etc. (i.e., hours, rather than days). Brown apples are not only fine to eat, they taste pretty much the same (people avoid them for aesthetic reasons). At present, numerous technologies exist to inhibit enzymatic oxidation, some of which are far scarier than this minor genetic manipulation, e.g., gamma irradiation.
